Trying out something new today. I’m a little late to the game but I’m finally trying out quinoa. I know it’s a power food but it’s pretty bland. If you are looking for a way to spice it up a little but keep the healthy factor, here you have it.
These
fritters are packed full of taste and beautiful colors while being a
great healthy addition to your dinner plate. I served them for the first
time at a dinner party and they were a hit. I left out what was in them
for those pickier eaters, but when I told them later, they were pleasantly surprised.

Heat a frying
pan and a couple teaspoons olive oil over medium-low heat. Mixture will
be slightly sticky, so using a 1/4 cup measuring cup, form fritters 1/2 thick and drop into pan. Fry until golden-brown,
about 4 minutes on each side. Makes approx. 15 fritters.

This sounds pretty good! I will have to try it. Thank you for linking up to Party Time and we hope to see you again next week!
